Description

Delightful dessert bars combining creamy lemon curd with fluffy marshmallow, balanced between sweet and tart for a refreshing treat.


Ingredients

  • 2 cups crushed graham crackers
  • ½ cup unsalted butter, melted (or coconut oil for dairy-free)
  • 1 cup lemon curd
  • 1 cup marshmallow fluff (or whipped aquafaba for vegan)
  • ½ cup powdered sugar
  • 2 large eggs (or 1 tablespoon flaxseed meal + 3 tablespoons water for vegan)
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the crushed graham crackers with melted butter. Stir until it resembles wet sand.
  3. Firmly press the mixture into the bottom of a greased 9×9 inch baking pan. Bake for 10 minutes and let cool.
  4. In a medium bowl, mix together lemon curd, marshmallow fluff, and powdered sugar until smooth. Whisk in eggs and lemon zest.
  5. Pour the filling mixture over the cooled crust, spreading evenly.
  6. Bake for 15-20 minutes until the filling is set but still jiggly in the center.
  7. Allow to cool completely in the pan before slicing into squares.

Notes

For added texture, top with fresh berries or toasted coconut flakes.
