- 2 cups crushed graham crackers
- ½ cup unsalted butter, melted (or coconut oil for dairy-free)
- 1 cup lemon curd
- 1 cup marshmallow fluff (or whipped aquafaba for vegan)
- ½ cup powdered sugar
- 2 large eggs (or 1 tablespoon flaxseed meal + 3 tablespoons water for vegan)
- 1 tablespoon lemon zest
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the crushed graham crackers with melted butter. Stir until it resembles wet sand.
- Firmly press the mixture into the bottom of a greased 9×9 inch baking pan. Bake for 10 minutes and let cool.
- In a medium bowl, mix together lemon curd, marshmallow fluff, and powdered sugar until smooth. Whisk in eggs and lemon zest.
- Pour the filling mixture over the cooled crust, spreading evenly.
- Bake for 15-20 minutes until the filling is set but still jiggly in the center.
- Allow to cool completely in the pan before slicing into squares.
Notes
For added texture, top with fresh berries or toasted coconut flakes.
