- 2 large Fresh Lemons
- 2 tablespoons Capers
- 3 cloves Garlic, minced
- 1/2 cup Olive Oil
- 1 tablespoon Dijon Mustard
- 1/4 cup fresh Parsley, chopped
- Salt and Pepper, to taste
Instructions
- Gather all your ingredients. Clean the lemons thoroughly since you’re using the juice and zest. Finely chop the parsley and mince the garlic.
- Using a zester, grate the outer yellow layer of the lemon peels, making sure to avoid the bitter white pith. Juice the lemons, aiming for about 1/4 cup of fresh juice.
- In a medium saucepan, heat the olive oil over low to medium heat. Allow it to warm up, but do not let it smoke.
- Add the minced garlic and capers to the warm oil. Sauté for about 1-2 minutes until the garlic is fragrant but not browned.
- Remove the saucepan from heat and immediately stir in the lemon juice, lemon zest, Dijon mustard, and chopped parsley. Mix well until all ingredients are thoroughly combined.
- Taste the sauce and adjust with salt and pepper as needed.
- This Lemon Caper Sauce is best enjoyed fresh. Spoon it over grilled fish, chicken, or steamed vegetables for a mouthwatering experience.
