Ingredients

  • 2 large Fresh Lemons
  • 2 tablespoons Capers
  • 3 cloves Garlic, minced
  • 1/2 cup Olive Oil
  • 1 tablespoon Dijon Mustard
  • 1/4 cup fresh Parsley, chopped
  • Salt and Pepper, to taste

Instructions

  1. Gather all your ingredients. Clean the lemons thoroughly since you’re using the juice and zest. Finely chop the parsley and mince the garlic.
  2. Using a zester, grate the outer yellow layer of the lemon peels, making sure to avoid the bitter white pith. Juice the lemons, aiming for about 1/4 cup of fresh juice.
  3. In a medium saucepan, heat the olive oil over low to medium heat. Allow it to warm up, but do not let it smoke.
  4. Add the minced garlic and capers to the warm oil. Sauté for about 1-2 minutes until the garlic is fragrant but not browned.
  5. Remove the saucepan from heat and immediately stir in the lemon juice, lemon zest, Dijon mustard, and chopped parsley. Mix well until all ingredients are thoroughly combined.
  6. Taste the sauce and adjust with salt and pepper as needed.
