Ingredients
- Thick wheat noodles (udon or naengmyeon)
- Beef shank or brisket (or flank steak for a leaner option)
- High-quality soy sauce
- Fresh garlic
- Fresh ginger
- Scallions
- Sesame oil
- Vegetables (bok choy, carrots, bell peppers)
- Chili paste or gochujang
Instructions
- Prepare the noodles according to package instructions, reserving some pasta water.
- In a large pan, heat sesame oil over medium heat and cook the sliced beef until browned, about 5-7 minutes.
- Add minced garlic and ginger and stir for about 2 minutes until fragrant.
- Pour in soy sauce and a splash of water, then add the vegetables. Cook for 5 minutes until veggies are tender.
- Add cooked noodles to the pan, tossing everything together. Use reserved pasta water to adjust consistency.
- Taste and adjust seasoning with salt or sesame oil as needed.
- Serve topped with chopped scallions and sesame seeds.
