  • Thick wheat noodles (udon or naengmyeon)
  • Beef shank or brisket (or flank steak for a leaner option)
  • High-quality soy sauce
  • Fresh garlic
  • Fresh ginger
  • Scallions
  • Sesame oil
  • Vegetables (bok choy, carrots, bell peppers)
  • Chili paste or gochujang

Instructions

  1. Prepare the noodles according to package instructions, reserving some pasta water.
  2. In a large pan, heat sesame oil over medium heat and cook the sliced beef until browned, about 5-7 minutes.
  3. Add minced garlic and ginger and stir for about 2 minutes until fragrant.
  4. Pour in soy sauce and a splash of water, then add the vegetables. Cook for 5 minutes until veggies are tender.
  5. Add cooked noodles to the pan, tossing everything together. Use reserved pasta water to adjust consistency.
  6. Taste and adjust seasoning with salt or sesame oil as needed.
  7. Serve topped with chopped scallions and sesame seeds.
