Ingredients

- 2 lbs beef chuck, cut into chunks
- 2 large onions, chopped
- 3 carrots, sliced into disks
- 4 cloves garlic, minced
- 2 tbsp tomato paste
- 1 can (14 oz) crushed tomatoes
- 1 cup dry red wine
- 2 tbsp olive oil
- 2 bay leaves
- 1 cinnamon stick
- Salt and pepper, to taste
Instructions
- Prepare all ingredients by chopping onions, carrots, and garlic.
- Heat olive oil in a large pot over medium-high heat, season beef with salt and pepper, and brown on all sides for about 5-7 minutes.
- Add chopped onions and sauté until translucent, about 4-5 minutes. Stir in garlic and cook for an additional minute.
- Mix in sliced carrots and cook for another 2-3 minutes.
- Add tomato paste, stirring it in for 2 minutes before adding red wine and scraping the bottom of the pot.
- Once the wine has reduced slightly, stir in canned tomatoes, bay leaves, and cinnamon stick.
- Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 hours, stirring occasionally.
- Taste the stew and adjust seasonings as necessary.
- Serve hot, preferably the next day for deeper flavors.
Notes
Kokkinisto is often better the next day, allowing flavors to meld. Be patient during the simmering process for the best results.
