Ingredients

  • 2 medium zucchini
  • 1 cup almond flour
  • 1/2 cup Parmesan cheese, grated
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the zucchini and slice them into fry-shaped sticks, about ¼ inch thick.
  3. In one bowl, whisk together the eggs. In another bowl, combine almond flour, Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.
  4. Dip each zucchini stick into the egg mixture, then roll in the dry mixture to coat.
  5. Place coated zucchini on a lined baking sheet, evenly spaced.
  6. Bake for about 20 minutes or until golden brown and crispy, flipping halfway through.
  7. Let cool slightly and serve immediately.
