- 2 medium zucchini
- 1 cup almond flour
- 1/2 cup Parmesan cheese, grated
- 2 large eggs

Instructions
- Preheat your oven to 425°F (220°C).
- Wash the zucchini and slice them into fry-shaped sticks, about ¼ inch thick.
- In one bowl, whisk together the eggs. In another bowl, combine almond flour, Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.
- Dip each zucchini stick into the egg mixture, then roll in the dry mixture to coat.
- Place coated zucchini on a lined baking sheet, evenly spaced.
- Bake for about 20 minutes or until golden brown and crispy, flipping halfway through.
- Let cool slightly and serve immediately.
