Description

Ingredients

  • 34 lbs chuck roast
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup dry red wine (or additional beef broth with a splash of vinegar)
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
  • Fresh thyme
  • ½ cup Swiss or Gruyère cheese (optional)

Instructions

  1. Preheat your oven to 325°F (163°C) or set slow cooker to low.
  2. In a large pot, heat olive oil over medium-high heat. Season the roast with salt and pepper. Sear for 4-5 minutes on each side until browned.
  3. Remove the roast and caramelize onions in the same pot for 15-20 minutes, stirring occasionally and sprinkling brown sugar.
  4. Add minced garlic and stir for an additional minute. Pour in the red wine and deglaze the pot.
  5. Return the roast to the pot, add beef broth, Worcestershire sauce, and thyme, and bring to a simmer.
  6. Cover and transfer to the oven. Cook for 4-5 hours until the meat is tender and easily pulled apart.
  7. Let the roast rest for 10-15 minutes before serving. Add cheese if desired before serving.

Notes

Serve over mashed potatoes, with fresh bread, or on a bed of greens for a lighter option.
