- 2 medium Zucchini, diced
- 2 tablespoons Olive Oil
- 3 cloves Garlic, minced
- 1 medium Onion, diced
- 1 can (14 oz) Crushed Tomatoes
- Fresh Basil, chopped
- Salt to taste
- Pepper to taste
Instructions
- Prep the vegetables by washing and dicing the zucchini, onion, and garlic.
- In a large skillet, heat olive oil over medium heat and sauté onions for 5 minutes until translucent; then add garlic and sauté for another 1-2 minutes.
- Add diced zucchini and sauté for 7-10 minutes until tender.
- Incorporate crushed tomatoes, salt, and pepper; bring to a simmer and cook uncovered for 15-20 minutes.
- Remove from heat, blend the sauce until smooth, and stir in chopped basil.
- Serve the sauce over pasta, as a pizza base, or with grilled chicken.
Notes
For a thicker sauce, let it simmer longer. Adjust seasoning to taste throughout the cooking process.
