Ingredients

  • 2 medium Zucchini, diced
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic, minced
  • 1 medium Onion, diced
  • 1 can (14 oz) Crushed Tomatoes
  • Fresh Basil, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Prep the vegetables by washing and dicing the zucchini, onion, and garlic.
  2. In a large skillet, heat olive oil over medium heat and sauté onions for 5 minutes until translucent; then add garlic and sauté for another 1-2 minutes.
  3. Add diced zucchini and sauté for 7-10 minutes until tender.
  4. Incorporate crushed tomatoes, salt, and pepper; bring to a simmer and cook uncovered for 15-20 minutes.
  5. Remove from heat, blend the sauce until smooth, and stir in chopped basil.
  6. Serve the sauce over pasta, as a pizza base, or with grilled chicken.

Notes

For a thicker sauce, let it simmer longer. Adjust seasoning to taste throughout the cooking process.
