Ingredients

  • 1 lb ground chicken
  • 1 cup Italian bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 3 cloves garlic, minced
  • 1/2 cup diced onions
  • 2 teaspoons Italian seasoning
  • 1/4 cup fresh parsley, chopped
  • 1 cup tomato sauce
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground chicken, Italian bread crumbs, grated Parmesan cheese, minced garlic, diced onions, eggs, and chopped parsley.
  3. Add about 2 teaspoons of Italian seasoning, salt, and pepper. Mix everything thoroughly but gently.
  4. Transfer the mixture into a greased loaf pan or shape it into a loaf on a lined baking sheet.
  5. Spread a thin layer of tomato sauce over the top of the meatloaf.
  6. Bake for about 60 minutes, checking that the internal temperature reaches 165°F (74°C).
  7. Let the meatloaf rest for about 10 minutes before slicing.

Notes

For a vegan option, use flax eggs and nutritional yeast. You can add grated vegetables like zucchini or carrots for extra moisture and nutrition.
