- 1 lb ground chicken
- 1 cup Italian bread crumbs
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 3 cloves garlic, minced
- 1/2 cup diced onions
- 2 teaspoons Italian seasoning
- 1/4 cup fresh parsley, chopped
- 1 cup tomato sauce
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the ground chicken, Italian bread crumbs, grated Parmesan cheese, minced garlic, diced onions, eggs, and chopped parsley.
- Add about 2 teaspoons of Italian seasoning, salt, and pepper. Mix everything thoroughly but gently.
- Transfer the mixture into a greased loaf pan or shape it into a loaf on a lined baking sheet.
- Spread a thin layer of tomato sauce over the top of the meatloaf.
- Bake for about 60 minutes, checking that the internal temperature reaches 165°F (74°C).
- Let the meatloaf rest for about 10 minutes before slicing.
Notes
For a vegan option, use flax eggs and nutritional yeast. You can add grated vegetables like zucchini or carrots for extra moisture and nutrition.
