- 1 cup granulated sugar
- 1 cup brown sugar
- 1 ¾ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp cinnamon

- 3 large eggs
- 2 tsp vanilla extract
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- 1 tbsp lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, combine granulated sugar, brown sugar, eggs, and vanilla extract. Whisk until fully blended.
- Fold in the grated carrots into the egg and sugar mixture.
- Gradually add the dry ingredient mixture to the wet mixture, stirring gently until just combined.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in your preheated oven for 30 minutes or until a toothpick inserted comes out clean.
- Allow the bars to cool completely in the pan on a wire rack.
- While the bars are cooling, beat softened cream cheese until smooth. Gradually add powdered sugar and lemon juice, mixing until creamy.
- Spread the cream cheese frosting generously over the cooled bars before serving.
Notes
Avoid overmixing the batter to ensure soft and moist bars. Cool completely before frosting.
