1 cup unsalted butter, softened
3/4 cup granulated sugar
1/2 cup light brown sugar, packed
1 large egg
2 tsp vanilla extract
2 Tbsp instant coffee granules dissolved in 2 Tbsp hot water
2 cups all-purpose flour
2 Tbsp cornstarch
1/2 tsp baking powder
1/4 tsp salt
1/2 cup mini chocolate chips or finely chopped dark chocolate (optional)
1/4 cup finely chopped toasted nuts (optional)
Instructions
In a large mixing bowl, beat the softened butter and sugars on medium-high speed until pale, fluffy, and smells slightly nutty—about 2 to 3 minutes.
Beat in the egg and vanilla until fully incorporated and smooth.
Stir in the coffee mixture until the dough looks uniform and a little glossy from the dissolved coffee.
In a separate bowl, whisk together flour, cornstarch, baking powder, and salt.
With the mixer on low, gradually add the dry ingredients to the wet ingredients, mixing just until combined. If you’re using mix-ins, fold them in now.
Chill the dough, covered, for 30 to 45 minutes.
Preheat the oven to 350°F (180°C). Line baking sheets with parchment or silicone mats.
Scoop dough into heaping tablespoon portions, or use a small cookie scoop. If you like, roll each ball in a little extra granulated sugar for sparkle.
Space dough balls at least 2 inches apart on the sheets. Bake 10–12 minutes, or until the edges are lightly golden and the centers still look soft. They’ll firm up as they cool.
Cool cookies on the sheet for 5 minutes, then transfer to a wire rack to cool completely. They’ll stay tender if kept in an airtight tin for up to 5 days.
