  • In a large mixing bowl, beat the softened butter and sugars on medium-high speed until pale, fluffy, and smells slightly nutty—about 2 to 3 minutes.
  • Beat in the egg and vanilla until fully incorporated and smooth.
  • Stir in the coffee mixture until the dough looks uniform and a little glossy from the dissolved coffee.
  • In a separate bowl, whisk together flour, cornstarch, baking powder, and salt.
  • With the mixer on low, gradually add the dry ingredients to the wet ingredients, mixing just until combined. If you’re using mix-ins, fold them in now.
  • Chill the dough, covered, for 30 to 45 minutes.
  • Preheat the oven to 350°F (180°C). Line baking sheets with parchment or silicone mats.
  • Scoop dough into heaping tablespoon portions, or use a small cookie scoop. If you like, roll each ball in a little extra granulated sugar for sparkle.
