4 large eggs
2 cups whole milk or half-and-half
1 cup heavy cream (optional)

1/2 cup brown sugar, packed
2 tsp vanilla extract
1 1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 pinch salt
1 cup chopped pecans, toasted
2 tbsp unsalted butter, plus extra for greasing the dish
Orange zest or lemon zest, optional, for brightness
Instructions
Whisk together eggs, milk, cream (if using), maple syrup, vanilla, cinnamon, nutmeg, and salt in a large bowl until well blended and smooth.
In a large baking dish, lightly butter the surface. Layer half of the cubed bread in an even layer, then sprinkle half of the toasted pecans over the bread. Repeat with the remaining bread and pecans.
Pour the custard over the bread, pressing down gently to ensure every piece is soaked. If time allows, cover and refrigerate for 20 minutes to overnight so the bread drinks up the flavors.
Preheat the oven to 350°F (175°C). Dot the top with small bits of butter and bake uncovered for 40–45 minutes, until the edges are golden and the center is puffed and set.
For a glossy maple glaze, whisk together a little powdered sugar with maple syrup and drizzle over the warm casserole just before serving.
Let the casserole rest for 5–10 minutes before slicing. Serve warm with extra maple syrup, a dollop of yogurt, or fresh fruit.
