Description

A hearty and nutritious chili recipe without beans, packed with protein and rich flavors.


Ingredients

  • 1 lb Ground beef (or turkey)
  • 1 Onion, chopped
  • 1 Bell pepper, chopped
  • 3 cloves Garlic, minced
  • 14 oz Diced tomatoes, canned (or fresh)
  • 2 tbsp Tomato paste
  • 2 cups Beef broth (or vegetable broth)
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tbsp Chili powder
  • 1 tsp Oregano
  • Salt and pepper, to taste

Instructions

  1. Set the Instant Pot to sauté mode. Add oil and sauté chopped onions for about 3-4 minutes until translucent. Add minced garlic and bell peppers; cook for another 2 minutes.
  2. Add ground beef (or turkey) and brown for about 5-7 minutes, breaking it up as it cooks. Drain excess fat.
  3. Stir in cumin, paprika, chili powder, and oregano; allow to bloom for 1-2 minutes.
  4. Mix in diced tomatoes (with juices), tomato paste, and broth; scrape browned bits off the bottom.
  5. Seal the lid and cook on high pressure for 20 minutes.
  6. Allow natural pressure release for 10 minutes, then quick release any remaining pressure.

Notes

For a healthier option, use ground turkey and low-sodium broth. Consider adding zucchini or carrots for extra nutrition.
