- 12 Medjool Dates, pitted
- 1/2 cup Peanut Butter (or almond/cashew butter)
- 1/2 cup Raw Almonds
- 1 cup Dark Chocolate (70% cacao or higher)
- 2 tbsp Coconut Oil
- Sea Salt, to taste
Instructions
- Prepare the Dates: Pit the Medjool dates and slice them down the middle to create a pocket.
- Fill with Peanut Butter: Fill each pocket with peanut butter using a spatula or knife.
- Add Almonds: Top each date with raw almonds, pressing them gently into the peanut butter.
- Prepare the Chocolate Coating: In a microwave-safe bowl, combine dark chocolate and coconut oil. Heat in 30-second increments until melted and smooth.
- Coat the Filled Dates: Dip each filled date into the melted chocolate, using a fork to let excess chocolate drip off.
- Sprinkle with Sea Salt: Before the chocolate sets, sprinkle a light pinch of sea salt over each coated date.
- Chill and Set: Place the baking sheet in the refrigerator for at least 15 minutes to allow the chocolate to set.
Notes
For a nut-free version, use sunflower seed or tahini butter instead of peanut butter.
