Ingredients

  • 1 3/4 cups powdered sugar
  • 3 large egg whites, room temperature
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • Green food coloring
  • Christmas sprinkles for decoration

Instructions

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. Beat egg whites in a clean bowl until foamy; slowly add granulated sugar and whisk until stiff peaks form.
  3. Sift almond flour and powdered sugar into the meringue and fold carefully until well combined.
  4. Add green food coloring and fold until evenly colored.
  5. Pipe small circles onto the prepared baking sheets and tap to release air bubbles.
  6. Let piped macarons rest for 30-60 minutes until a dry skin forms.
  7. Bake for 15-20 minutes, rotating halfway through until light golden brown.
  8. Cool completely on baking sheets.
  9. Whip butter with powdered sugar and heavy cream until fluffy, then add vanilla.
  10. Assemble by piping filling onto half of the shells and topping with the other half.

Notes

For a vegan option, substitute egg whites with aquafaba and unsalted butter with vegan butter.
