- 1 3/4 cups powdered sugar
- 3 large egg whites, room temperature
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- Green food coloring
- Christmas sprinkles for decoration
Instructions
- Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
- Beat egg whites in a clean bowl until foamy; slowly add granulated sugar and whisk until stiff peaks form.
- Sift almond flour and powdered sugar into the meringue and fold carefully until well combined.
- Add green food coloring and fold until evenly colored.
- Pipe small circles onto the prepared baking sheets and tap to release air bubbles.
- Let piped macarons rest for 30-60 minutes until a dry skin forms.
- Bake for 15-20 minutes, rotating halfway through until light golden brown.
- Cool completely on baking sheets.
- Whip butter with powdered sugar and heavy cream until fluffy, then add vanilla.
- Assemble by piping filling onto half of the shells and topping with the other half.
Notes
For a vegan option, substitute egg whites with aquafaba and unsalted butter with vegan butter.
