Description

A delightful and nutritious dish featuring bell peppers stuffed with herbed ricotta cheese, bursting with flavor.


Ingredients

  • 3 Bell Peppers (red, yellow, or green)
  • 1 cup Ricotta Cheese
  • 1/4 cup Fresh Herbs (basil, parsley, oregano)
  • 1 clove Garlic (minced)
  • Zest of 1 Lemon
  • 2 tablespoons Olive Oil
  • Salt and Pepper (to taste)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Carefully slice the tops off the bell peppers and remove the seeds.
  3. In a mixing bowl, combine ricotta cheese, chopped herbs, minced garlic, lemon zest, and a pinch of salt and pepper. Mix well.
  4. Generously spoon the ricotta mixture into each hollowed pepper.
  5. Place the stuffed peppers upright in a baking dish. Drizzle with olive oil and sprinkle with salt and pepper.
  6. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until peppers are tender and filling is golden.

Notes

For a lighter option, use reduced-fat ricotta. You can also mix in cooked quinoa or brown rice for added fiber.
