Ingredients

- 3 Bell Peppers (red, yellow, or green)
- 1 cup Ricotta Cheese
- 1/4 cup Fresh Herbs (basil, parsley, oregano)
- 1 clove Garlic (minced)
- Zest of 1 Lemon
- 2 tablespoons Olive Oil
- Salt and Pepper (to taste)
Instructions
- Preheat the oven to 375°F (190°C).
- Carefully slice the tops off the bell peppers and remove the seeds.
- In a mixing bowl, combine ricotta cheese, chopped herbs, minced garlic, lemon zest, and a pinch of salt and pepper. Mix well.
- Generously spoon the ricotta mixture into each hollowed pepper.
- Place the stuffed peppers upright in a baking dish. Drizzle with olive oil and sprinkle with salt and pepper.
- Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until peppers are tender and filling is golden.
Notes
For a lighter option, use reduced-fat ricotta. You can also mix in cooked quinoa or brown rice for added fiber.
