  • 1 cup herbed cottage cheese (or low-fat cottage cheese or Greek yogurt)
  • 1/2 cup unsalted butter (cut into small chunks)
  • 3/4 cup milk (regular, almond, or oat milk)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. Cut the cold butter into the dry mixture until it resembles coarse crumbs.
  4. Gently stir in the herbed cottage cheese.
  5. Add the milk and mix just until combined.
  6. Turn out the dough onto a floured surface and pat it into a 1-inch thick rectangle.
  7. Cut out biscuits and place them on a parchment-lined baking sheet.
  8. Bake for 20-25 minutes, or until golden brown. Optionally, brush with melted butter before finishing baking.
  9. Cool slightly on a wire rack and serve warm.
