- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup herbed cottage cheese (or low-fat cottage cheese or Greek yogurt)
- 1/2 cup unsalted butter (cut into small chunks)
- 3/4 cup milk (regular, almond, or oat milk)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, whisk together the all-purpose flour, baking powder, and salt.
- Cut the cold butter into the dry mixture until it resembles coarse crumbs.
- Gently stir in the herbed cottage cheese.
- Add the milk and mix just until combined.
- Turn out the dough onto a floured surface and pat it into a 1-inch thick rectangle.
- Cut out biscuits and place them on a parchment-lined baking sheet.
- Bake for 20-25 minutes, or until golden brown. Optionally, brush with melted butter before finishing baking.
- Cool slightly on a wire rack and serve warm.
