  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Crust: Blend the almonds in a food processor until fine crumbs form. Add the pitted Medjool dates and blend until sticky. Press the mixture into the bottom of each jar.
  2. Make the Cheesecake Filling: In a mixing bowl, combine softened cream cheese and Greek yogurt until smooth. Add honey or maple syrup, lemon juice, zest, and vanilla; mix until combined. Gently fold in chopped strawberries.
  3. Assemble the Jars: Spoon the cheesecake filling over the crust in the jars, filling about three-quarters full. Chill in the fridge for at least one hour before serving.
