- 1 cup Medjool dates, pitted
- 1 cup Greek yogurt
- 8 oz low-fat cream cheese, softened
- 1 cup fresh strawberries, chopped
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
Instructions
- Prepare the Crust: Blend the almonds in a food processor until fine crumbs form. Add the pitted Medjool dates and blend until sticky. Press the mixture into the bottom of each jar.
- Make the Cheesecake Filling: In a mixing bowl, combine softened cream cheese and Greek yogurt until smooth. Add honey or maple syrup, lemon juice, zest, and vanilla; mix until combined. Gently fold in chopped strawberries.
- Assemble the Jars: Spoon the cheesecake filling over the crust in the jars, filling about three-quarters full. Chill in the fridge for at least one hour before serving.
Notes
For a nut-free version, use rolled oats or whole grain crackers instead of almonds. For vegan adaptations, replace dairy with coconut or nut-based alternatives.
