- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- ¼ tsp ground cloves
- ½ cup unsalted butter, softened
- ½ cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- ½ cup jam or preserves (your choice)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
- In a large bowl, beat the softened butter, brown sugar, and white sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture, blending until thoroughly combined.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Using a tablespoon, portion out dough and roll it into balls. Space them about two inches apart on a baking sheet lined with parchment paper.
- With your thumb (or the back of a spoon), gently press down in the center of each ball to create an indentation.
- Spoon a small amount of jam into each thumbprint, being careful not to overfill.
- Place the baking sheet in the preheated oven and bake for 12-15 minutes or until edges are light golden brown.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Store the cooled cookies in an airtight container for up to 5 days; freeze for longer storage.
