Ingredients

  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • ¼ tsp ground cloves
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup jam or preserves (your choice)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a large bowl, beat the softened butter, brown sugar, and white sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture, blending until thoroughly combined.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Using a tablespoon, portion out dough and roll it into balls. Space them about two inches apart on a baking sheet lined with parchment paper.
  7. With your thumb (or the back of a spoon), gently press down in the center of each ball to create an indentation.
  8. Spoon a small amount of jam into each thumbprint, being careful not to overfill.
  9. Place the baking sheet in the preheated oven and bake for 12-15 minutes or until edges are light golden brown.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Store the cooled cookies in an airtight container for up to 5 days; freeze for longer storage.
