1 pound green beans, trimmed
3 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
1 teaspoon dried rosemary or 1 tablespoon fresh chopped rosemary
1/2 teaspoon paprika
Salt and freshly ground black pepper
Zest of 1 lemon
Fresh parsley, chopped, for garnish
Lemon wedges for serving
Optional: grated Parmesan or feta for a salty, creamy finish
Instructions
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment for easy cleanup.
In a large bowl, toss the potatoes with 2 tablespoons olive oil, minced garlic, thyme, rosemary, paprika, salt, and pepper until evenly coated. Spread them in a single layer on the sheet pan.
Roast for 20 minutes, until the edges begin to turn a deep golden and the centers feel fork-tender when tested.
While the potatoes roast, trim the green beans and toss them with the remaining 1 tablespoon olive oil and a pinch of salt.
Remove the sheet from the oven, add the green beans, and give everything a gentle toss to coat. Return to the oven and roast 12–15 more minutes, until potatoes are crisp and beans are bright-tender. If you want extra browning, finish with a quick 1–2 minute under the broiler.
Remove from the oven. Sprinkle with lemon zest and chopped parsley, then taste and adjust salt and pepper. A light squeeze of lemon juice over the top adds a fresh zing just before serving.
