Description

Delicious garlic butter zucchini skewers, perfect for summer grilling and a great way to highlight fresh produce.

Ingredients

Scale
  • 4 medium Zucchini
  • 4 cloves Garlic, minced
  • 1/2 cup Unsalted Butter
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Fresh Black Pepper
  • 1 tablespoon Fresh Herbs, chopped (Basil or Parsley)

Instructions

  1. Prepare your ingredients by washing zucchini, cutting off the ends, and slicing into 1-inch rounds.
  2. Make the garlic butter by melting unsalted butter in a small saucepan, then adding minced garlic, salt, and black pepper. Stir for about 2 minutes.
  3. Skewer the zucchini rounds onto skewers, leaving space between pieces for even cooking.
  4. Brush the garlic butter mixture over the skewered zucchini, reserving some for later basting.
  5. Preheat the grill to medium-high heat.
  6. Grill the skewers for 10-15 minutes, turning occasionally and basting with reserved garlic butter.
  7. Serve warm as a side dish or appetizer.

Notes

Ensure wooden skewers are soaked for at least 30 minutes to prevent burning. Avoid overcooking to maintain texture.
