2 1/4 teaspoons active dry yeast
375 g all-purpose flour (plus extra as needed)

2 cloves garlic, finely minced
1 tablespoon chopped parsley (optional)
1 pinch salt
Instructions
Bloom the yeast: In a small bowl, whisk warm milk with a pinch of sugar. Sprinkle in the yeast and swirl gently. Let it sit 5–10 minutes until foamy. If it doesn’t foam, your liquid might be too hot or the yeast is inactive—start over with fresh yeast.
Mix the dough: In a large bowl, combine flour, remaining sugar, and salt. Add the melted butter, egg, and the foamy yeast mixture. Stir until a shaggy ball forms.
Knead until smooth: Turn the dough onto a lightly floured surface and knead 6–8 minutes by hand, or 4–5 minutes in a stand mixer with a dough hook, until it’s soft, elastic, and only slightly tacky.
First rise: Lightly oil a clean bowl, place the dough inside, cover, and let it rise 60–75 minutes until doubled and fluffy.
Prepare garlic butter: Melt butter, add minced garlic, parsley (if using), and a pinch of salt. Keep warm but not hot.
Shape the rolls: Punch down the dough gently. Divide into 12–16 equal pieces and shape into tight smooth balls. Place them on a greased baking sheet or in a greased 9-inch round or 9×13 pan, spacing slightly for puffing.
Second rise: Cover and let rise 25–40 minutes until puffy and touching in places. A gentle spring when poked indicates readiness.
Bake and brush: Heat oven to 375°F (190°C). Bake 15–20 minutes, until the tops are golden. Remove and brush generously with the warm garlic butter. Return to the oven for 1–2 minutes if you want extra gloss and aroma.
