Description

Delightful bars combining the tartness of lemon, the sweetness of fresh figs, and the creaminess of cream cheese, perfect for impressing friends and family.


Ingredients

  • 1 cup fresh figs, chopped
  • 8 oz cream cheese, softened
  • Zest from 1 large lemon
  • 2 tbsp lemon juice
  • 3/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 cup butter, melted
  • 1 large egg
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8 inch baking dish with butter or line it with parchment paper.
  3. In a medium bowl, combine the all-purpose flour and salt.
  4. In a large bowl, whisk together melted butter and granulated sugar until smooth. Add the egg, lemon zest, and lemon juice, mixing well.
  5. Slowly add the dry mixture to the wet mixture, stirring until just combined.
  6. Gently fold in the chopped fresh figs.
  7. Spread the mixture evenly in your prepared baking dish.
  8. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool for 10 minutes before transferring to a wire rack to cool completely. Cut into squares and serve!
