A comforting casserole marrying the classic flavors of French onion soup with creamy orzo and tender chicken.

- 8 oz Orzo Pasta
- 1 lb Boneless Chicken Thighs
- 2 large Onions, sliced
- 2 cloves Garlic, minced
- 4 cups Beef Broth
- 1 cup Heavy Cream
- 1 cup Gruyère Cheese, shredded
- 1 tsp Fresh Thyme
- Salt and Pepper to taste
- 2 tbsp Butter
- 1 tbsp Olive Oil
Instructions
- Sauté the onions in butter over medium heat for 15-20 minutes until caramelized.
- Season and sear chicken thighs in a separate skillet until golden brown.
- Combine caramelized onions, garlic, beef broth, heavy cream, and cooked orzo in a bowl.
- Add seared chicken and half of the Gruyère cheese to the mixture.
- Transfer to a greased casserole dish, top with remaining cheese, and bake at 350°F (175°C) for 25-30 minutes.
- Let rest for 5-10 minutes before serving. Garnish with thyme.
Notes
For a lighter option, substitute skinless chicken breasts and use half-and-half instead of heavy cream.
