French Onion Chicken Orzo Casserole

Description

A comforting casserole marrying the classic flavors of French onion soup with creamy orzo and tender chicken.


Ingredients

  • 8 oz Orzo Pasta
  • 1 lb Boneless Chicken Thighs
  • 2 large Onions, sliced
  • 2 cloves Garlic, minced
  • 4 cups Beef Broth
  • 1 cup Heavy Cream
  • 1 cup Gruyère Cheese, shredded
  • 1 tsp Fresh Thyme
  • Salt and Pepper to taste
  • 2 tbsp Butter
  • 1 tbsp Olive Oil

Instructions

  1. Sauté the onions in butter over medium heat for 15-20 minutes until caramelized.
  2. Season and sear chicken thighs in a separate skillet until golden brown.
  3. Combine caramelized onions, garlic, beef broth, heavy cream, and cooked orzo in a bowl.
  4. Add seared chicken and half of the Gruyère cheese to the mixture.
  5. Transfer to a greased casserole dish, top with remaining cheese, and bake at 350°F (175°C) for 25-30 minutes.
  6. Let rest for 5-10 minutes before serving. Garnish with thyme.

Notes

For a lighter option, substitute skinless chicken breasts and use half-and-half instead of heavy cream.
