Ingredients

  • 5 medium apples (Granny Smith or Honeycrisp)
  • 3 large eggs
  • 150g all-purpose flour
  • 120g granulated sugar
  • 100ml whole milk
  • 50g melted butter
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • A pinch of salt

Instructions

  1. Prepare the apples by peeling, coring, and slicing them thinly.
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Whisk together.
  3. In another bowl, whisk together the eggs, melted butter, milk, and vanilla extract until smooth.
  4. Pour the egg mixture into the dry ingredients, stirring gently until just combined.
  5. Fold in the apple slices until well-coated.
  6. Prepare a round cake pan and pour the mixture in, spreading evenly.
  7. Bake in a preheated oven at 350°F (175°C) for about 40 minutes.
  8. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For a dairy-free version, substitute butter with coconut oil. Use almond or oat milk as a milk alternative.
