- 4 large Eggs
- 1/2 cup Granulated Sugar
- 2 teaspoons Vanilla Extract
- 1 cup Whole Milk
- 2 tablespoons Unsalted Butter + extra for greasing
- 2 tablespoons All-Purpose Flour
- A pinch of Salt
- Powdered Sugar (for dusting)
Instructions
- Preheat your oven to 375°F (190°C).
- Butter four ramekins generously and dust them with granulated sugar.
- In a medium saucepan, melt 2 tablespoons of butter over medium heat, stir in the flour to create a roux, and cook for about 1 minute until slightly golden.
- Slowly whisk in the milk and cook until thickened (about 2-3 minutes), then remove from heat and stir in vanilla and salt.
- Separate the eggs and place the whites in a mixing bowl, and yolks in another bowl.
- Whisk egg yolks into the cooled base until combined.
- Whip egg whites until soft peaks form, then gradually add sugar and whip until stiff peaks form.
- Gently fold a third of the whipped egg whites into the yolk mixture, then carefully fold in the rest.
- Divide the soufflé mixture among the ramekins, filling them three-quarters full.
- Bake for 20-25 minutes until puffed and golden, and serve immediately, dusted with powdered sugar if desired.
Notes
Serve with whipped cream or fresh berries for added richness and flavor.
