Ingredients

  • 1/2 cup Granulated Sugar
  • 2 teaspoons Vanilla Extract
  • 1 cup Whole Milk
  • 2 tablespoons Unsalted Butter + extra for greasing
  • 2 tablespoons All-Purpose Flour
  • A pinch of Salt
  • Powdered Sugar (for dusting)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Butter four ramekins generously and dust them with granulated sugar.
  3. In a medium saucepan, melt 2 tablespoons of butter over medium heat, stir in the flour to create a roux, and cook for about 1 minute until slightly golden.
  4. Slowly whisk in the milk and cook until thickened (about 2-3 minutes), then remove from heat and stir in vanilla and salt.
  5. Separate the eggs and place the whites in a mixing bowl, and yolks in another bowl.
  6. Whisk egg yolks into the cooled base until combined.
  7. Whip egg whites until soft peaks form, then gradually add sugar and whip until stiff peaks form.
  8. Gently fold a third of the whipped egg whites into the yolk mixture, then carefully fold in the rest.
  9. Divide the soufflé mixture among the ramekins, filling them three-quarters full.
  10. Bake for 20-25 minutes until puffed and golden, and serve immediately, dusted with powdered sugar if desired.
