- 6 oz white chocolate, melted
- 1 cup heavy cream, whipped
Instructions
- Prepare the Crust: Combine graham cracker crumbs with melted unsalted butter, press into the bottom of a 9-inch springform pan, and bake at 350°F (175°C) for 10 minutes. Cool.
- Make the Cheesecake Filling: Beat cream cheese and sugar until smooth. Add sour cream and vanilla, mix, then add eggs one at a time.
- Bake the Cheesecake: Pour filling into the crust and bake at 325°F (160°C) for 60 minutes.
- Cool and Chill: Turn off the oven, crack the door, and let the cheesecake cool. Cover and refrigerate for at least 4 hours or overnight.
- Prepare the Cranberry Jam: Cook fresh cranberries, sugar, and water until thick. Cool before layering.
- Make the White Chocolate Mousse: Melt white chocolate, cool slightly, then fold into whipped cream.
- Assemble the Cheesecake: Spread cranberry jam over the cheesecake, top with white chocolate mousse, and chill for another 30 minutes before serving.

Use Greek yogurt instead of sour cream for a healthier twist. Ensure all ingredients are at room temperature for easier mixing.
