Ingredients

- 2 cups sushi rice
- 1/4 cup rice vinegar
- 8 ounces cream cheese (softened)
- 1 cup chopped imitation crab (or fresh crab)
- 1/4 cup chopped green onions
- 1 tablespoon Sriracha
- Soy sauce, for drizzling
- Sesame seeds, for garnish
Instructions
- Cook the sushi rice according to package instructions and rinse under cold water until clear.
- Transfer cooked rice to a bowl and fold in rice vinegar, sugar, and salt while warm.
- In a separate bowl, mix cream cheese, imitation crab, green onions, and Sriracha until well combined.
- Spread half of the sushi rice in a greased baking dish, layer crab mixture on top, then add remaining rice.
- Bake at 350°F (175°C) for 20-30 minutes until warmed and slightly browned.
- Remove from the oven, garnish with sesame seeds, drizzle with soy sauce, slice, and serve warm.
Notes
For a healthier twist, consider using brown rice or Greek yogurt instead of cream cheese.
