- ½ cup brown sugar

- 1 egg yolk
- ½ cup pineapple jam
- 1 cup shredded coconut
- 1 tsp vanilla extract

- ¼ tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
- In a separate bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg yolk and vanilla extract to the butter mixture and mix until combined.
- Gradually add the dry ingredients to the wet mixture and mix on low speed just until combined.
- Fold in the shredded coconut.
- Scoop tablespoon-sized portions of the dough and roll them into balls, placing them on a parchment-lined baking sheet.
- Make a small indentation in the center of each dough ball.
- Fill each indentation with a small dollop of pineapple jam.
- Bake for 12-15 minutes, or until the edges turn golden brown, then cool on a wire rack.
