1 lb ground turkey (93/7 for best flavor and juiciness)

4 cups potatoes, diced small (Yukon gold or yellow preferred)

2 tablespoons olive oil (divided)

23 cloves garlic, minced

1 cup tomato sauce (plain, unsalted)

½ cup water or chicken broth

½ teaspoon dried oregano

½ teaspoon dried basil

½ teaspoon dried parsley

½ teaspoon onion powder

½ teaspoon garlic powder

¼ teaspoon chili powder

Salt and black pepper, to taste

Fresh parsley or chives, for garnish (optional)


Instructions

  1. Brown the turkey:
    Heat 1 tablespoon olive oil in a large skillet over medium heat. Add ground turkey, season lightly with salt and pepper, and cook until browned and no longer pink. Break it up as it cooks, then transfer to a plate and set aside.

  2. Crisp the potatoes:
    Add remaining olive oil to the same pan. Add diced potatoes and cook for 8–10 minutes, stirring occasionally, until golden and tender on the inside.

  3. Add aromatics:
    Stir in minced garlic and cook for 30 seconds until fragrant.

  4. Combine and simmer:
    Return turkey to the pan. Add tomato sauce, water (or broth), and all seasonings. Stir well to coat everything evenly.

  5. Simmer covered:
    Reduce heat to medium-low, cover, and let simmer for 10–12 minutes, stirring occasionally, until potatoes are fork-tender and sauce thickens.

  6. Taste and serve:
    Adjust seasoning with extra salt or herbs if needed. Garnish with fresh parsley or chives and serve warm straight from the skillet.

Notes

Storage: Refrigerate leftovers for up to 4 days or freeze for up to 2 months.

Reheating: Warm on the stove over medium heat with a splash of broth or water.
