Ingredients

  • 8 oz high-quality dark chocolate (70% cocoa or semi-sweet)
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream (or full-fat coconut milk)
  • 1 pre-made tart shell (or homemade with 1 cup flour, 1/2 cup butter, and 1/4 cup powdered sugar)
  • 12 cups fresh raspberries
  • Powdered sugar for garnish

Instructions

  1. Preheat oven to 350°F (175°C). If making your own tart shell, combine flour, cold butter, and powdered sugar until crumbly. Press into a tart pan and bake for 15-20 minutes. Allow to cool.
  2. In a saucepan, heat heavy cream over low heat until simmering. Remove from heat, add chopped dark chocolate, and stir until melted and smooth. Optionally, add vanilla extract.
  3. Pour melted chocolate ganache into cooled tart shell and refrigerate for at least 2 hours until set.
  4. Arrange fresh raspberries on top and sprinkle with powdered sugar before serving.
  5. Slice and enjoy the wonderful contrast of chocolate and raspberry flavors.

Notes

For a richer flavor in the tart shell, opt for grass-fed butter. Consider alternative sweeteners for a healthier option.
