- 8 oz high-quality dark chocolate (70% cocoa or semi-sweet)
- 1/2 cup unsalted butter, cold and cubed
- 1 cup heavy cream (or full-fat coconut milk)
- 1 pre-made tart shell (or homemade with 1 cup flour, 1/2 cup butter, and 1/4 cup powdered sugar)
- 1–2 cups fresh raspberries
- Powdered sugar for garnish
Instructions
- Preheat oven to 350°F (175°C). If making your own tart shell, combine flour, cold butter, and powdered sugar until crumbly. Press into a tart pan and bake for 15-20 minutes. Allow to cool.
- In a saucepan, heat heavy cream over low heat until simmering. Remove from heat, add chopped dark chocolate, and stir until melted and smooth. Optionally, add vanilla extract.
- Pour melted chocolate ganache into cooled tart shell and refrigerate for at least 2 hours until set.
- Arrange fresh raspberries on top and sprinkle with powdered sugar before serving.
- Slice and enjoy the wonderful contrast of chocolate and raspberry flavors.
Notes
For a richer flavor in the tart shell, opt for grass-fed butter. Consider alternative sweeteners for a healthier option.
