Ingredients

  • 1 cup chocolate (dark, semi-sweet, or milk)
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • 1 cup fresh or frozen raspberries
  • 2 tablespoons granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Graham cracker or cookie crust

Instructions

  1. Prepare the crust by crushing about 10-12 graham crackers and mixing with melted butter and sugar.
  2. Press the mixture into a tart pan and pre-bake at 350°F (175°C) for 10 minutes.
  3. In a saucepan, combine chocolate, heavy cream, and butter over low heat until melted and smooth.
  4. Remove from heat and whisk in beaten eggs and vanilla extract.
  5. Fold in the raspberries and pour the filling into the cooled crust.
  6. Bake for 20-25 minutes at 350°F (175°C) until set but slightly jiggly in the center.
  7. Cool on a wire rack and refrigerate for at least 2 hours before serving.
