Description

Ingredients

  • 1 ½ cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1 ½ tsp Baking Powder
  • ½ tsp Salt
  • ½ cup Unsalted Butter, softened
  • 2 Large Eggs
  • 1 tsp Vanilla Extract
  • 1 cup Peach Puree
  • 8 oz Cream Cheese, softened
  • 2 cups Powdered Sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream the butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
  5. Gradually mix in the dry ingredients and peach puree, alternating between the two, starting and ending with dry ingredients.
  6. Distribute the batter into the lined cupcake tin, filling each cup about 2/3 full. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. Beat the softened cream cheese until smooth, then gradually add powdered sugar and mix until creamy. Flavor with vanilla extract and beat until fluffy.
  9. Once the cupcakes are cool, frost them with the cream cheese icing and decorate as desired.

Notes

For a dairy-free version, substitute unsalted butter with coconut oil and cream cheese with vegan cream cheese. Can be stored in an airtight container for freshness.
