- 1 ½ cups All-Purpose Flour
- 1 cup Granulated Sugar
- 1 ½ tsp Baking Powder
- ½ tsp Salt
- ½ cup Unsalted Butter, softened
- 2 Large Eggs
- 1 tsp Vanilla Extract
- 1 cup Peach Puree
- 8 oz Cream Cheese, softened
- 2 cups Powdered Sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.
- Cream the butter and sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
- Gradually mix in the dry ingredients and peach puree, alternating between the two, starting and ending with dry ingredients.
- Distribute the batter into the lined cupcake tin, filling each cup about 2/3 full. Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Beat the softened cream cheese until smooth, then gradually add powdered sugar and mix until creamy. Flavor with vanilla extract and beat until fluffy.
- Once the cupcakes are cool, frost them with the cream cheese icing and decorate as desired.
Notes
For a dairy-free version, substitute unsalted butter with coconut oil and cream cheese with vegan cream cheese. Can be stored in an airtight container for freshness.
