- 2 lbs organic carrots
- 3 tbsp extra virgin olive oil
- 1 tsp sea salt
- 1/2 tsp freshly cracked black pepper
- 1 tsp garlic powder
- 1 tsp ground cumin
- Fresh herbs (thyme or parsley, optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the carrots, cutting them into approximately 3-inch pieces.
- In a large pot, boil enough water to cover the carrots and cook them for about 10 minutes until fork-tender.
- Drain the carrots and smash each one using the bottom of a glass or a potato masher.
- Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and cumin; toss lightly to coat.
- Roast in the oven for 20-25 minutes, flipping halfway through for even crispiness.
- Remove from the oven and garnish with fresh herbs if desired.
Notes
Ensure even spacing on the baking sheet to avoid steaming. Adjust seasonings according to preference.
