Ingredients

  • 2 lbs organic carrots
  • 3 tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 1/2 tsp freshly cracked black pepper
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • Fresh herbs (thyme or parsley, optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the carrots, cutting them into approximately 3-inch pieces.
  3. In a large pot, boil enough water to cover the carrots and cook them for about 10 minutes until fork-tender.
  4. Drain the carrots and smash each one using the bottom of a glass or a potato masher.
  5. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and cumin; toss lightly to coat.
  6. Roast in the oven for 20-25 minutes, flipping halfway through for even crispiness.
  7. Remove from the oven and garnish with fresh herbs if desired.
