- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 1/2 cup all-purpose flour

Instructions
- Preheat your oven to 425°F (220°C).
- Cut your onions into thin rings, about ¼ inch thick.
- Create a breading station with three bowls: one with flour (seasoned with salt and pepper), one with beaten eggs, and the last with panko, Parmesan, and optional seasonings.
- Dip each onion ring into the flour, then into the egg, and finally coat with the panko mixture.
- Line a baking sheet with parchment paper and arrange the coated onion rings in a single layer, drizzling olive oil over the top.
- Bake for 15 to 20 minutes, flipping halfway through, until golden brown and crispy.
- Let cool slightly before serving.
