Ingredients

- 2 ripe avocados
- 1 cup grated Parmesan cheese
- 1 cup panko breadcrumbs
- 2 eggs, lightly beaten
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Cut the ripe avocados in half, remove the pit, and slice into wedges.
- In one bowl, place the beaten eggs. In another, combine panko, Parmesan, garlic powder, paprika, salt, and pepper.
- Dip each avocado wedge into the egg mixture, then coat with the breadcrumb mixture.
- Preheat the air fryer to 375°F (190°C).
- Arrange avocado fries in a single layer in the air fryer basket and cook for 10-12 minutes, shaking halfway through.
- Serve hot with your choice of dipping sauce.
Notes
Make sure to use slightly firm avocados for best results. Try serving with homemade tzatziki or spicy mayo for extra flavor.
