Description
A quick and delicious creamy garlic shrimp served over fluffy mashed potatoes, perfect for a comforting meal any night of the week.
Ingredients
- Shrimp (1 pound, peeled and deveined)
- Butter (4 tablespoons)
- Garlic (4 cloves, minced)
- Heavy Cream (1 cup)
- Chicken Broth (1/2 cup)
- Lemon Juice (1 tablespoon, freshly squeezed)
- Parmesan Cheese (1/2 cup, grated)
- Parsley (for garnish, chopped)
- Mashed Potatoes (2 pounds Yukon gold potatoes)
Instructions
- Prepare the Mashed Potatoes: Peel and chop potatoes into small chunks. Boil in salted water until tender (about 15-20 minutes). Drain, mash with butter and cream until creamy and smooth, then reserve.
- Cook the Shrimp: In a large skillet, melt butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add shrimp in an even layer and cook for 2-3 minutes per side until pink.
- Make the Cream Sauce: Stir in chicken broth and heavy cream, bringing to a gentle simmer. Add lemon juice and grated Parmesan, stirring until cheese melts and sauce thickens (about 3-4 minutes). Season with salt and pepper to taste.
- Combine and Serve: Create a bed of mashed potatoes on plates, spoon creamy garlic shrimp over, garnish with parsley, and serve immediately.
Notes
For a lighter option, you can substitute heavy cream with half-and-half or coconut cream. Serve with lemon, salad, or steamed vegetables for a balanced meal.
