Ingredients

  • 1 cup long-grain or medium-grain rice
  • 2 cups chicken or vegetable broth
  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • Salt and pepper to taste
  • Optional add-ins: peas, spinach, shredded chicken, cooked shrimp

Instructions

  1. Gather all your ingredients and chop the onion and garlic finely.
  2. In a medium saucepan, add the rinsed rice with the broth. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes.
  3. In a separate skillet, melt the butter over medium heat. Add the chopped onion and garlic, sauté for about 3-5 minutes until translucent.
  4. Add the heavy cream to the skillet and stir well. Reduce heat and mix in the cheeses until melted. Add broth or water if too thick.
  5. Fold the cooked rice into the creamy cheese mixture.
  6. Season with salt and pepper. Stir in any optional add-ins. Serve hot.

Notes

For a lighter version, use brown rice and low-fat cheese. Consider adding vegetables for an extra nutritional boost.
