- 1 cup long-grain or medium-grain rice
- 2 cups chicken or vegetable broth
- 2 tablespoons butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup sharp cheddar cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- Salt and pepper to taste
- Optional add-ins: peas, spinach, shredded chicken, cooked shrimp
Instructions
- Gather all your ingredients and chop the onion and garlic finely.
- In a medium saucepan, add the rinsed rice with the broth. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes.
- In a separate skillet, melt the butter over medium heat. Add the chopped onion and garlic, sauté for about 3-5 minutes until translucent.
- Add the heavy cream to the skillet and stir well. Reduce heat and mix in the cheeses until melted. Add broth or water if too thick.
- Fold the cooked rice into the creamy cheese mixture.
- Season with salt and pepper. Stir in any optional add-ins. Serve hot.
Notes
For a lighter version, use brown rice and low-fat cheese. Consider adding vegetables for an extra nutritional boost.
