Ingredients

  • 2 medium Cucumbers
  • ½ cup Plain Greek Yogurt
  • 2 tablespoons Rice Vinegar
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Honey or Maple Syrup
  • 1 tablespoon Fresh Ginger, grated
  • 2 cloves Garlic, minced
  • ¼ cup Chopped Green Onions
  • 1 tablespoon Sesame Seeds

Instructions

  1. Wash and prepare the cucumbers by slicing them thinly.
  2. In a medium bowl, combine the Greek yogurt, rice vinegar, sesame oil, honey or maple syrup, ginger, and garlic. Whisk until smooth.
  3. In a large bowl, add the sliced cucumbers and drizzle the dressing over them. Toss until well-coated.
  4. Sprinkle the chopped green onions and sesame seeds over the salad and toss again.
  5. Chill in the refrigerator for about 15 minutes before serving.

Notes
