Description

Ingredients

  • 2 cups cottage cheese
  • 2 cups mixed vegetables (bell peppers, zucchini, spinach)
  • 3 large eggs
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté chopped onions and minced garlic for 3-4 minutes until translucent.
  3. Add mixed vegetables and cook for another 5 minutes until slightly tender.
  4. In a large mixing bowl, combine cottage cheese, eggs, sautéed vegetables, salt, and pepper. Mix well.
  5. Fold in half of the shredded cheddar cheese.
  6. Pour the mixture into a greased baking dish and top with remaining cheddar cheese.
  7. Bake for 30-35 minutes or until the top is golden and bubbly.
  8. Let cool for 5 minutes before slicing and serving.
