Ingredients

- 2 cups cottage cheese
- 2 cups mushrooms (cremini or shiitake)
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Prepare the Ingredients: Measure all ingredients, dice onion and garlic, and slice mushrooms.
- Sauté the Aromatics: Heat olive oil in a large pot; add onion and sauté until translucent (about 5 mins). Add garlic and sauté for another minute.
- Cook the Mushrooms: Add mushrooms and sauté until browned (7-10 mins).
- Add the Broth and Seasonings: Pour in vegetable broth, thyme, salt, and pepper. Bring to a boil, then simmer for 5 minutes.
- Blend the Soup: Use an immersion blender to blend until smooth.
- Stir in the Cottage Cheese: Incorporate cottage cheese and heat gently for 3 minutes.
- Serve and Enjoy: Ladle into bowls, garnishing as desired.
