Ingredients

Instructions

  3. Cook the Mushrooms: Add mushrooms and sauté until browned (7-10 mins).
  4. Add the Broth and Seasonings: Pour in vegetable broth, thyme, salt, and pepper. Bring to a boil, then simmer for 5 minutes.
  5. Blend the Soup: Use an immersion blender to blend until smooth.
  6. Stir in the Cottage Cheese: Incorporate cottage cheese and heat gently for 3 minutes.
  7. Serve and Enjoy: Ladle into bowls, garnishing as desired.
