Description

Delicious cinnamon rolls made healthier with cottage cheese, providing a protein boost while keeping indulgent flavors.


Ingredients

  • 1 cup cottage cheese
  • 2 cups all-purpose flour (or whole wheat flour)
  • 2 tsp baking powder
  • 1/4 cup sugar (coconut sugar or substitute optional)
  • 2 tsp cinnamon (freshly ground recommended)
  • 1/2 tsp salt
  • 1/4 cup butter (or coconut oil)
  • 1 egg (or unsweetened applesauce as substitute)
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cottage cheese, egg, melted butter, and vanilla extract. Mix until smooth.
  3. In another bowl, whisk together the flour, baking powder, sugar, salt, and cinnamon. Gradually incorporate the dry ingredients into the wet mixture, stirring until a soft dough forms.
  4. On a lightly floured surface, roll out the dough to about ½ inch thick, shaping it into a rectangle (approximately 10×15 inches).
  5. In a small bowl, mix sugar and cinnamon for the filling. Spread melted butter over the rolled dough, then sprinkle the cinnamon-sugar mixture on top.
  6. Starting from one long edge, tightly roll the dough into a log shape and slice into 12 equal pieces.
  7. Place the sliced rolls in a greased 9×13 inch baking dish and bake for 20-25 minutes, or until golden and puffy.
  8. Allow rolls to cool slightly before serving warm, optionally drizzled with icing.

Notes

These rolls can be topped with cream cheese frosting or served with fruit compote.
