- 1 cup cottage cheese
- 2 cups all-purpose flour (or whole wheat flour)
- 2 tsp baking powder
- 1/4 cup sugar (coconut sugar or substitute optional)
- 2 tsp cinnamon (freshly ground recommended)
- 1/2 tsp salt
- 1/4 cup butter (or coconut oil)
- 1 egg (or unsweetened applesauce as substitute)
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the cottage cheese, egg, melted butter, and vanilla extract. Mix until smooth.
- In another bowl, whisk together the flour, baking powder, sugar, salt, and cinnamon. Gradually incorporate the dry ingredients into the wet mixture, stirring until a soft dough forms.
- On a lightly floured surface, roll out the dough to about ½ inch thick, shaping it into a rectangle (approximately 10×15 inches).
- In a small bowl, mix sugar and cinnamon for the filling. Spread melted butter over the rolled dough, then sprinkle the cinnamon-sugar mixture on top.
- Starting from one long edge, tightly roll the dough into a log shape and slice into 12 equal pieces.
- Place the sliced rolls in a greased 9×13 inch baking dish and bake for 20-25 minutes, or until golden and puffy.
- Allow rolls to cool slightly before serving warm, optionally drizzled with icing.
Notes
These rolls can be topped with cream cheese frosting or served with fruit compote.
