Ingredients
- Fettuccine or Spaghetti
- Beetroot
- Heavy Cream
- Parmesan Cheese

Instructions
- Prepare the Beets: Wash and peel beetroot, cut into cubes, and boil for 15 minutes until tender.
- Cook the Pasta: Boil salted water, add pasta, and cook until al dente (8-10 minutes). Reserve a cup of pasta water.
- Blend the Beets: Drain beets and blend with heavy cream, garlic, salt, and pepper until smooth.
- Combine with Pasta: Heat olive oil in a skillet, add beet sauce, then stir in cooked pasta. Adjust consistency with reserved pasta water if needed.
- Add Cheese and Serve: Toss in Parmesan cheese and serve hot with herb garnish if desired.
