  • Heavy Cream

Instructions

  2. Cook the Pasta: Boil salted water, add pasta, and cook until al dente (8-10 minutes). Reserve a cup of pasta water.
  3. Blend the Beets: Drain beets and blend with heavy cream, garlic, salt, and pepper until smooth.
  4. Combine with Pasta: Heat olive oil in a skillet, add beet sauce, then stir in cooked pasta. Adjust consistency with reserved pasta water if needed.
  5. Add Cheese and Serve: Toss in Parmesan cheese and serve hot with herb garnish if desired.
