Description

A delightful bread recipe that transforms overripe bananas into a sweet, cinnamon-spiced treat.


Ingredients

  • 34 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan.
  3. Mash the ripe bananas in a bowl until mostly smooth.
  4. In another bowl, whisk together flour, baking soda, salt, cinnamon, granulated sugar, and brown sugar.
  5. Add melted butter, eggs, and vanilla extract to the mashed bananas and mix well.
  6. Gradually add the dry mixture to the wet ingredients, stirring gently.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50 to 60 minutes, until a toothpick comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice and serve as desired.

Notes

For a vegan option, substitute eggs with flaxseed meal mixed with water.
