Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ⅓ cup sugar
  • 16 oz cream cheese, softened
  • 1 cup white chocolate, melted
  • 1 cup sour cream
  • 1 cup sugar (or preferred sweetener)
  • 3 large eggs
  • 1 cup cranberry jam
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

Instructions

  1. Preheat your oven to 325°F (160°C). In a medium bowl, mix graham cracker crumbs, melted butter, and sugar. Press evenly into the bottom of a springform pan. Bake for 10 minutes and let cool.
  2. In a large bowl, beat cream cheese until smooth. Gradually add sugar, then mix in sour cream and melted white chocolate until creamy.
  3. Beat in eggs one at a time, mixing just until blended.
  4. Pour cheesecake filling into the cooled crust and smooth the top. Bake for 1 hour. Turn off the oven and leave cheesecake inside for an additional hour.
  5. Remove from the oven and let cool at room temperature. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  6. To prepare the cranberry jam, simmer cranberries with sugar and water until the mixture thickens. Let cool.
  7. Whip heavy cream until soft peaks form. Fold in melted white chocolate and vanilla extract.
  8. Spread white chocolate mousse over the cranberry-topped cheesecake and decorate with additional cranberries or white chocolate shavings.

Notes

For a gluten-free option, substitute graham crackers with gluten-free crumbs. Consider using cashew cream for a dairy-free alternative.
