- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ⅓ cup sugar
- 16 oz cream cheese, softened
- 1 cup white chocolate, melted
- 1 cup sour cream
- 1 cup sugar (or preferred sweetener)
- 3 large eggs
- 1 cup cranberry jam
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
Instructions
- Preheat your oven to 325°F (160°C). In a medium bowl, mix graham cracker crumbs, melted butter, and sugar. Press evenly into the bottom of a springform pan. Bake for 10 minutes and let cool.
- In a large bowl, beat cream cheese until smooth. Gradually add sugar, then mix in sour cream and melted white chocolate until creamy.
- Beat in eggs one at a time, mixing just until blended.
- Pour cheesecake filling into the cooled crust and smooth the top. Bake for 1 hour. Turn off the oven and leave cheesecake inside for an additional hour.
- Remove from the oven and let cool at room temperature. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
- To prepare the cranberry jam, simmer cranberries with sugar and water until the mixture thickens. Let cool.
- Whip heavy cream until soft peaks form. Fold in melted white chocolate and vanilla extract.
- Spread white chocolate mousse over the cranberry-topped cheesecake and decorate with additional cranberries or white chocolate shavings.
Notes
For a gluten-free option, substitute graham crackers with gluten-free crumbs. Consider using cashew cream for a dairy-free alternative.
