- 100g Fresh Raspberries
- 30g Unsalted Butter
- 50g Powdered Sugar

Instructions
- Finely chop the dark chocolate and place it in a medium-sized bowl.
- Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer, then remove from heat.
- Pour the hot cream over the chopped chocolate and stir gently until smooth.
- Mash the raspberries in a separate bowl and stir in the raspberry puree and unsalted butter into the ganache until fully combined.
- Cover the bowl with plastic wrap and refrigerate until firm, about 1-2 hours.
- Using a small cookie scoop, portion out the ganache and roll into balls.
- Roll each truffle in cocoa powder until nicely covered.
- Place on a parchment-lined tray and chill briefly before serving or storing.
