Ingredients

  • 200g Dark Chocolate (70% cocoa or higher)
  • 100ml Heavy Cream
  • 100g Fresh Raspberries
  • 30g Unsalted Butter
  • 50g Powdered Sugar
  • Cocoa Powder (for coating)

Instructions

  1. Finely chop the dark chocolate and place it in a medium-sized bowl.
  2. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer, then remove from heat.
  3. Pour the hot cream over the chopped chocolate and stir gently until smooth.
  4. Mash the raspberries in a separate bowl and stir in the raspberry puree and unsalted butter into the ganache until fully combined.
  5. Cover the bowl with plastic wrap and refrigerate until firm, about 1-2 hours.
  6. Using a small cookie scoop, portion out the ganache and roll into balls.
  7. Roll each truffle in cocoa powder until nicely covered.
  8. Place on a parchment-lined tray and chill briefly before serving or storing.
