  • 1 egg yolk (or flax egg)
  • 1 cup heavy cream (or half-and-half)
  • 8 ounces dark chocolate (70% cacao or more), finely chopped
  • 1/2 cup fresh orange juice
  • Zest of 1 large orange
  • 2 tablespoons granulated sugar
  • Whipped cream or orange segments (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine the flour, cocoa powder, and powdered sugar. Add the cold, cubed butter and blend until crumbly.
  2. Mix in the egg yolk and a tablespoon of cold water until the dough comes together. If it’s too dry, add more water, one teaspoon at a time.
  3. Press the dough into a 9-inch tart pan. Chill in the fridge for 15 minutes, pricking the bottom to prevent bubbling.
  4. Bake the crust for 10-12 minutes until set but not browned. Let it cool completely.
  5. In a saucepan, bring the heavy cream to a simmer. Remove from heat and add dark chocolate, stirring until smooth.
  6. Mix in orange juice and zest, adjusting sugar to balance flavors.
  7. Pour the chocolate mixture into the cooled crust, smoothing the top.
  8. Chill the tart in the refrigerator for at least 2 hours until set.
  9. Garnish with whipped cream or orange segments before serving. Slice and enjoy!

Notes

Chilling the crust is crucial to prevent shrinking. Consider adding a splash of coffee to enhance the chocolate flavor.
