  • 1 lb (450g) Ground Chicken
  • 1 small Onion, finely grated
  • 3 cloves Garlic, minced
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1/4 cup Parsley, chopped
  • Salt, to taste
  • Freshly cracked Black Pepper, to taste
  • 2 tbsp Olive Oil (or Avocado Oil)
  • 1 cup Plain Yogurt
  • 1 tbsp Lemon Juice

Instructions

  1. In a large mixing bowl, combine ground chicken, grated onion, minced garlic, ground cumin, ground coriander, chopped parsley, salt, and pepper. Mix until well combined, avoiding overmixing.
  2. Shape the mixture into oval or sausage-like forms around skewers, or form patties if skewers are not available.
  3. Heat olive oil in a skillet over medium-high heat until shimmering.
  4. Place kofta skewers in the skillet, without overcrowding, and cook for 5-6 minutes on each side until browned and cooked through to an internal temperature of 165°F.
  5. While the kofta cooks, whisk together yogurt, minced garlic, lemon juice, and salt in a bowl, adjusting seasoning as needed.
  6. Serve the kofta hot drizzled with garlic yogurt sauce, accompanied by pita, fresh vegetables, or rice.

Notes

For a vegetarian option, replace ground chicken with chickpeas or lentils. Chill kofta for 30 minutes before cooking for better cohesion.
