- 1 lb (450g) Ground Chicken
- 1 small Onion, finely grated
- 3 cloves Garlic, minced
- 1 tsp Ground Cumin
- 1 tsp Ground Coriander
- 1/4 cup Parsley, chopped
- Salt, to taste
- Freshly cracked Black Pepper, to taste
- 2 tbsp Olive Oil (or Avocado Oil)
- 1 cup Plain Yogurt
- 1 tbsp Lemon Juice
Instructions
- In a large mixing bowl, combine ground chicken, grated onion, minced garlic, ground cumin, ground coriander, chopped parsley, salt, and pepper. Mix until well combined, avoiding overmixing.
- Shape the mixture into oval or sausage-like forms around skewers, or form patties if skewers are not available.
- Heat olive oil in a skillet over medium-high heat until shimmering.
- Place kofta skewers in the skillet, without overcrowding, and cook for 5-6 minutes on each side until browned and cooked through to an internal temperature of 165°F.
- While the kofta cooks, whisk together yogurt, minced garlic, lemon juice, and salt in a bowl, adjusting seasoning as needed.
- Serve the kofta hot drizzled with garlic yogurt sauce, accompanied by pita, fresh vegetables, or rice.
Notes
For a vegetarian option, replace ground chicken with chickpeas or lentils. Chill kofta for 30 minutes before cooking for better cohesion.
