Ingredients

12 oz pasta (farfalle, penne, or rigatoni)

2 medium chicken breasts, seasoned with salt, pepper, and Italian seasoning

2 tbsp olive oil

3 tbsp unsalted butter

4 cloves garlic, minced

2 tbsp all-purpose flour

1 cup chicken broth (low sodium recommended)

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 tsp Italian seasoning

¼ tsp red pepper flakes (optional)

½ cup reserved pasta waterSalt & pepper to taste


Instructions

Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve ½ cup of pasta water before draining.

Season chicken with salt, pepper, and Italian seasoning. Heat olive oil in a skillet over medium-high heat and sear chicken for 5–6 minutes per side until golden and cooked through. Remove to a plate and let rest.

In the same skillet, lower heat to medium and melt butter. Add garlic and cook until fragrant (about 30 seconds). Stir in flour and cook 1 minute to form a roux.

Slowly whisk in chicken broth, then cream. Simmer 2–3 minutes until slightly thickened.

Stir in Parmesan until melted and smooth. Taste and adjust seasoning. Add red pepper flakes if desired.

Slice chicken. Toss pasta in the sauce, adding reserved pasta water as needed for consistency. Fold in chicken and coat everything in the creamy sauce.

Serve warm with extra Parmesan on top

Notes

For extra veggies, add spinach, broccoli, or sautéed mushrooms.

Swap chicken breasts for thighs or shrimp for a flavor twist.

To reheat, add a splash of milk or pasta water to loosen the sauce.
