- 4 Russet Potatoes
- 1 cup Cheddar Cheese, shredded
- 2 tablespoons Olive Oil
- Fresh Herbs (rosemary, thyme)
- 1 teaspoon Garlic Powder
- Salt and Pepper, to taste
- 1/2 cup Sour Cream or Greek Yogurt
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and scrub the Russet potatoes, then pat them dry.
- Carefully slice the potatoes about 1/8 inch apart, stopping just before hitting the bottom.
- Brush olive oil generously over the potatoes and sprinkle with garlic powder, salt, and pepper.
- Place the potatoes in a baking dish and bake for 45 minutes.
- After 45 minutes, stuff shredded cheddar cheese between the potato slices and bake for another 15 minutes, adding herbs during the last 5 minutes.
- Let the potatoes cool slightly, then drizzle with sour cream or Greek yogurt before serving hot.
