Ingredients

  • 4 Russet Potatoes
  • 1 cup Cheddar Cheese, shredded
  • 2 tablespoons Olive Oil
  • Fresh Herbs (rosemary, thyme)
  • 1 teaspoon Garlic Powder
  • Salt and Pepper, to taste
  • 1/2 cup Sour Cream or Greek Yogurt

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and scrub the Russet potatoes, then pat them dry.
  3. Carefully slice the potatoes about 1/8 inch apart, stopping just before hitting the bottom.
  4. Brush olive oil generously over the potatoes and sprinkle with garlic powder, salt, and pepper.
  5. Place the potatoes in a baking dish and bake for 45 minutes.
  6. After 45 minutes, stuff shredded cheddar cheese between the potato slices and bake for another 15 minutes, adding herbs during the last 5 minutes.
  7. Let the potatoes cool slightly, then drizzle with sour cream or Greek yogurt before serving hot.
