Description

These Cheesy BBQ Chicken Stuffed Zucchini Boats are tender, smoky, and filled with saucy shredded BBQ chicken and melted cheddar cheese. A wholesome, flavor-packed dinner that’s quick to make, family-friendly, and ideal for busy weeknights.

Ingredients

4 medium zucchini – halved lengthwise and scooped out
2 cups shredded chicken – rotisserie or cooked leftovers
½ cup BBQ sauce – smoky or sweet style
1 cup shredded cheddar cheese – or a blend of your favorite cheeses
1 tablespoon olive oil – for brushing the zucchini
Salt and pepper – to taste
2 green onions – thinly sliced for garnish
Optional: chopped cilantro or crumbled bacon for topping


Instructions

1. Preheat oven to 400°F (200°C). Line a baking sheet or dish with parchment paper.
2. Prepare zucchini: Slice each zucchini in half lengthwise. Scoop out the centers, leaving a thin rim to form “boats.” Brush lightly with olive oil and sprinkle with salt and pepper.
3. Make filling: In a medium bowl, combine shredded chicken and BBQ sauce until well coated.
4. Assemble: Spoon the BBQ chicken mixture evenly into each zucchini boat. Top generously with shredded cheese.
5. Bake: Cover loosely with foil and bake for 25 minutes. Remove foil and bake another 10–15 minutes, until cheese is bubbly and zucchini is fork-tender.
6. Garnish & Serve: Sprinkle with green onions and optional toppings. Serve warm.

Notes

Use rotisserie chicken to save time.
Try different cheeses like pepper jack or smoked gouda for a twist.
For a vegetarian version, use black beans or lentils instead of chicken.
